I freehand my Shun knives on Shapton Pro water stones, and examine the edge with a loupe under bright light as I go along to make sure I am getting a good apex and a consistent scratch pattern from each stone in the progression.

Oct 16, 2007 · If the Shun knives are cut at exactly 16 dps and the Sharpmaker's 30 degree inclusive setting is exactly at 15 dps, then you will be reprofiling for a while before you get to the actual edge of the knife. This could take forever and a day, or perhaps, since the angles are so close it won't take quite that long.

Sep 18, 2016 · Trust the sushi chef. Hones can and will damage the edge of a hard steel knife. Just makes going back to the stone that much more difficult. Honing rods DO remove metal, they are essentially fine files. Maintaining the edge with a 3k stone is like using a honing rod but will give consistent results and a much better edge.

(thats 99% of blades with primary grinds) the edge angle you're getting with a 17dps wedge is 20-23 dps (17+3 to 17+6) with the 20dps wedge thats 23-26 degrees per ...

Marttiini Finland on the blade and has the Rapala fish mark on the handle. Found the same knife online and grabbed a photo. I tried sharpening it and found it rather unresponsive to my stones.

Half a degree on this bevel make a big difference in performance of the knife. Depending on where you live on earth, the material you shall cut, slice or chop is different.
